First time harvesting... how big steps?

I've got 2 cans of Heady Topper left that I will be drinking and attempting to harvest yeast from (starting a frozen yeast farm, of sorts).

How big should my steps be for 2 cans? I only have a 1L and 3L erlenmeyer flask to use, so I was thinking the following.
Est. starting yeast 4 billion cells (from 2 cans of Heady Topper)
Step 1: 0.4L starter at 1.040, shaking a few times a day = 19b cells
Step 2: 1.5L starter at 1.040, with stir plate = 259b cells
Step 3: 3.0L starter at 1.040, with stir plate = 738b cells

After crashing and decanting, these will be mixed with glycerine and frozen. I'm hoping to get 50ml vials of ~100b cells each. Does this look right? Are my steps too large? Would I end up with clean enough yeast for freezing?
