Going to be trying my first partigyle and attempting my first decoction mash as well. Hoping to not to get too mushy of a mash for all the run off I'll be doing. Considering adding some rice hulls after my last decoction to the mash to help out. Any thoughts?

Recipe:
Doppelbock
5gal batch
OG est 1.084 (thinking 58-60% efficiency)
IBU 27
SRM 26

Grain:
Munich 10L - 96.5%
CaraAroma 130L - 2.5%
Midnight Wheat - 1%

Hop additions:
Hallertauer mittelfruh - 2oz 60 minutes
Hallertauer mittelfruh - 1oz 15 minutes

Yeast:
Wyeast 2124 Bohemian lager

Going to rest in 10 gallons water at 144F for 20 minutes, decoct 5qts for a 15 minutes boil then add back to my mash to raise to 158F and hold for 20 minutes. Decoct another 5qt for a 15 minute boil and add back to raise to 170F for 10 minutes. Then vorlauf and drain 6.5 gallons of wort. Boil will be 1.5hrs.

Dunkel
5gal batch

Grain:
Same as above, second runnings

Hops:
Hallertauer mittelfruh - 1oz 60 minutes
Hallertauer mittelfruh - 0.5oz 15 minutes
(may change depending on pre-boil gravity)

Yeast:
Wyeast 2124 Bohemian lager

Drain any remaining wort if any from dobbelbock. Add 3 gallons water at 150F to the hot grain and let sit for 20 minutes. Vorauf and drain. Sparge with enough water to get 6 gallons of wort. Boil will be 1hr

Looks like I'd end up with not as strong of a wort as I want for the doppelbock... The issue I'm running into is wanting to use a high qts of H2O to lbs of grain ratio for the decoction. It leaves me with 9 gallons of wort with my first runnings at ~11 plato. I was only planning on a 1.5 hr boil. Im guessing my only options would be a longer boil or to decrease my h20/grain ratio. Any thoughts on the need for a high h20/grain ratio for a decoction mash?

I don't think you'll come close to your temperature targets with only 5qt decoction to raise the temperature of the rest of your wort. Without running numbers for your situation, I've found I need to take 1/3rd volume of my mash as my decoction, or at the very least, double the volume of what any calculators tell you to take, as a safety valve. I would not recommend doing a decoction and partigyle on the same batch, especially if both are firsts for you. You'll come up short on both and be frustrated during and after. Take on one process at a time on separate batches.

Also, you may want to consider subbing some pilsner/pale malt for Munich to help provide sufficient enzymes for conversion. A step mash/decoction could help but again, that has to be a dialed-in process.
