Used a kit. I have about .75 gallons in a gallon jug. Do I need to fill it up with water or no? It has been about a day since I transferred it into the jug.
 
If that .75 gallons was all wort you should be alright, the beer will just be stronger if you didn't add the .25 gallons of water
 
When fermentation gets really going strong, you will get a lot of foaming (that's the krausen you'll see people talk about on this site.) If you had a full gallon of wort in a gallon jug, a lot of it would end up blowing out the airlock (ask me how I know. :)) You want to have headspace in your primary fermenter, and you might also want to learn about blow off tubes.
