First batch!

Hows it going everyone! Long time stalker decided to finally make an account and say HELLO!.


Last night started my first batch of hard cider.

5 Gallons of Pasteurized apple cider
1 red star champagne
yeast nutrient
4 tbs of sugar (get yeast started)


For my final product I hope to have a semi dry sweet finish to apply flavor. ( I am force carbonating and backsweeting)

Question I have is, Has anyone simmered down into a syrup? I simmered a gallon of organic apple juice and it made about 1-2 cups of super sweet apple flavor syrup. My idea is to backsweeten with this and see how it turns out. Just wondering if anyone else has any info. Oh and pictures BELOW!

I have simmer reduced juice down to 1/6 of its volume and used as a concentrate. Takes a bloody long time (2.4L to 0.6L - about an hour). I used it to backsweeten and carb my cider with great results.

But then I found some locally available concentrates and will never sit over the simmering pot for that long again!!!
 
Nice super excited about this. Was your recipe similar? (Seems most are). It seems the cider is going crazy, rhino farts through the s lock ever 1-3 secs and it has changed colors to a lighter brown.
