I have my first 2 liter yeast starter on the stirplate with Belgian Ardennes (Wyeast Labs #3522). It is fermenting well after 8 hours. I planned to let it ferment 24-36 hours and then refrigerate for a brew in 6 days. Is this okay or do I need to brew sooner?

Give it longer on the stir plate, 48 hrs., then chill, be sure to leave 1/2" of beer on it if you decant off the excess wort.

After 26 hours...why did I wait so long to do yeast starters?
