There are many options to this including presser transfers to kegs. Special equipment such as ball locks on the fermentor lid and spundling valves to regulate the pressure, and things like ball locks and magnets to dry hop.

Then there are special Yeast strain like Kriek that can produce good lagers at temps well above room. Also. California common steam beer is fermented at 60-65*.
