Hi - is it better for my stout to ferment at 75 degrees or 66 degrees? We're having an unusual warm spell in Seattle and yesterday my stout (day two of fermentation) started bubbling out of the airlock and it was at 75 degrees (per the sticky thermometer I attached to the outside). So we took it to our basement and this morning, the thermometer reads 66 degrees.
Our basement will have less temperature fluctuation. In our house, the temperature will increase during the day by a few degrees and decrease at night by a few degrees.
I'm wondering which place is better for this stout to ferment?
