Newbie brewer doing my 2nd 1-gallon beer w/Brooklyn brew shop all-grain method. I think I'm avoiding many of the mistakes I made the first time.

What's a good fermentation period for the 1-gallon RyePA? The b.b. shop recipe book says 2weeks, but I've heard in other forums that it's better to err on the side of a longer fermentation. This is using U.S. West Coast 'M44' Yeast.
 
you can go longer if you want, but 2 weeks is plenty long in most circumstances. just give it a week or so after fermentation has subsided to let the yeast clean up & settle out.
 
The longer it stays in the fermenter the clearer it will be. I do all my beers for 3-4 weeks and then cold crash. I don't even take SG readings till I bottle.
