I started an IPA brew 2 weeks ago and it seems to still be fermenting in the carboy! (I can still hear the 'gurgling'). I typically leave my brew in the carboy for two weeks and then transfer it to bottles (no 2nd fermentation done).
I am surprised it is still making noise after two weeks! Is this a problem. Do I just need to wait until it stops for a few days before I bottle it?
