So i've got a pale ale recipe I'm planning on brewing up in the next few days, basically Jamil's from Brewing Classic Styles
- 8lbs -2 Row
.75lbs munich
.75lbs victory
.5lbs wheat

I'm going to brew this as a 100% brett fermentation with brett trois, and to help build mouthfeel I was planning on upping the wheat a little bit. I was planning on going to 1.5lbs wheat malt, but was wondering how high would people be comfortable going on the wheat? would going up to 2.5lbs be too much? I'll adjust the hops accordingly to keep the BU:GU ratio about the same, and if it becomes an IPA, well then that's fine too. I've actually really liked the "white IPA's" that i've tried so I'm thinking a heavy wheat component wouldn't be a bad thing, but just not sure on how much wheat malt would be a good amount. Any ideas?
