is there a risk of contamination if soldering 2 copper tubing to make a 25' Immersion Chiller? The join will be submerged in the wort...

Contamination(metals) could be a problem if the appropriate solder is not used. Use something that is deigned for drinking water. As far as biological contaminants no. It will all reach boiling temps and be sanitised if put in 15 minutes ish before the boil is done.

Use 0% solder (lead free). It is specifically for plumbing/drinking water.
