Do hops need to grow straight up?

I'm planning a trellis that is about 5' tall and 12' long. The vines will grow up to a horizontal post and then grow horizontally. It seems that this will make inspection and harvesting easy.

Do you foresee any problems with this design?

They won't grow as well. You can train them horizontally, but they will try to grow up. I've tried training mine along a fence and they don't yield nearly as much as the vertical ones do.
 
From watching mine grow up a pole and onto a fence, it would be best if you set this up where the strings run North-South with the plants at the north end. This way during the day as they grow towards the sun they will move down the string. Then you'll just have to keep tending them so they wrap around the string. They can easily grow 2-3ft taller than a support pole before their weight makes them droop.
