I ordered the following ingredients and now am scared my ratio of grain to dme is off. All grain is already mixed.

---- Briess Traditional Dark Dry Extract 7.5 lb
---- Briess Roasted Barley 0.5 lb
--- Briess Flaked Oats 0.5 lb
---- Briess 2 Row Caramel 0.5 lb
---- Briess Organic Chocolate 0.5 lb
---- Franco-Belges Kiln Coffee 0.5 lb
---- Crisp Black Malt 0101486 0.5 lb
---- Oak Chips, Toasted - 4 oz. 1 ea
---- Malto Dextrin - 8 oz package 1 ea

I will use 1 oz magnum at 60 minutes.

I also have several oz's of amarillo and citra hops and am unsure how much/when to add for flavor.

ANY help would be greatly appreciated.

Well you don't have to have a certain ratio of DME to grains. The more DME will just give you higher alcohol. I've never used a dark DME tho even in my stouts. I always got the color from the speciality grains. What are you making a oatmeal coffee stout? I would save those tasty amarillo and citra hops for late or dry hopping a lighter beer where you can really taste them

Yeah I try to stay away from the dark extract and let the specialty grains doe that work.
