DIY 500 liter brewing setup

The time has come. I got the money, experience and a workspace and I am setting up my own brewery.

Brewery volume would be 3000 liters a month, but the main problem I am having is this:

In Croatia, and for our economic standards, professional equipment like braumeister kettles and the like are too expensive. I have found a guy that does amazing stuff with stainless steel, the only problem is what do I want to do?

Is a 500l (~130 gallons) HERMS rig even plausible? What really are the best ways to make a brew kettle and mash tun with the capacity needed?

We can make almost anything, and my final decision has to be whether to go electric or gas, and this influences the build greatly.

For the record I brew 10 gallon batches in a single tier 3 vessel diy HERMS system so I'm no expert at all on 500L diy systems. That said, if it was me and my money I'd consider asking my stainless guy if he could make something like a dual nano system like this:
