I currently have two wheat beers fermenting at 68 in the basement. The recipes are as follows:

32% 3 0 Wheat Dry Extract info 44 8 ~
32% 3 0 White Wheat Malt info 40 2 ~
11% 1 0 Rahr Pilsner Malt info 34 2 ~
11% 1 0 Cara-Pils/Dextrine info 33 2 ~
11% 1 0 Wheat, Torrified info 36 1 ~
5% 0 8 Rice Hulls info 0 0 ~
Batch size: 5.0 gallons

My first question in general is how do I determine what a diaceytl rest is? I have one wheat (wit, hefe, whatever) that bubbled after 3 days of no bubbles, is that a stuck fermentation?

Second question is since the watermelon juice (on the watermelon wit) will re-start fermentation, do I rack it or add it primary? And what of over pitching the 3944? Does it kill the naners flavor inherent in blegian yeast, or wreck the beer with nasty flavor?

Both of the above yeast strains say over pitching will kill the banana flavor, which I do not want to over power either of these beers, but I am hesitant to over pitch. Especially considering the citrus wheat stalled and came back on it's own.

I know, rdwhahb, but damn, wish I knew more about yeast.
