Hi all,

Got burned by diacetyl a couple of years back so I often do a rest, whether it's merited or not. Is there any reason to do one with a stout? I'm using Omega's 004 Chico. Any one have diacetyl problems with that strain? The only reason I'm hesitant to do that with this one is that the recipe said to keep temps on the low side (60F). Cheers!

I always do , even my stouts . Its just habit for me . The way I look at it is it won't hurt by letting the yeast clean up . I dont know why the recipe says keep at 60 but I always bring a lager up for a rest then back down .
