Degassing Apfelwein?

If you're planning to keep it still, do you need to degas before bottling?
 
never degassed mine, bottled straight from the carboy, but never had any bottle carbonation.

Thinking of this, seems odd.
 
I have never taken the extra step to degas Apfelwein either. Like above, I also rack to a bottling bucket and bottle from there. So far so good. :mug:

So about a week after it completely stopped bubbling the airlock, the pressure equalized and the water level in the airlock returned to a neutral level.

So I bottled, but it still has a bit of a sour flavor. Is this from lack of aging, or indicative of bacteria contamination? Will this fade with time? How long will it take to age and mellow out the flavors?
