deer feeder motor for stir plate?

I have bits and pieces of several old deer feeder controllers, motors, spin plates, circuit , housings and what not. They all run off of rechargeable 6 volt batteries I already have. With the purchase of a potentiometer for speed control does anyone see why I could not piece together a home made yeast stirrer similar to ones I have seen on threads using old computer fans. Other than not having the inherent cooling effects of a fan, as long as I provide adequate ventilation it should not over heat I do not think and it would be completely self contained and portable. What do ya think? Pros, Cons.....
 
should work fine but remember the feeder motors are designed for intermittent use. if its to fast use a resistor thats at least double the potentometer ohm rating.
