Cooper's 3.75lb. kits

Hi there, Got some questions. I brew 2.5 gallon extract batches,with steeping grains. I usually use a Muntons 3.3lb can,add some hops and steep some L20 or 40 and some carapils.What I'd like to know is if I use a Cooper's 3.75,or 4lb kit,witout the extra malt (for a 5 gal. batch),will it make a decent beer? Will it be WAY to high ABV?.Will it be too bitter? Has anyone tried this yet? Any info,advice,or guidance will be greatly appreciated.TIA Randolf. BTW,I'll still use the specialty grain in the batch.
 
4 pounds of liquid extract and nothing else in a 2.5 gallon batch should give you about 5.5% alcohol. Not too much.

If the extract is hopped it`ll be more bitter than you usually get for thst style but just don`t get a really bitter style of beer to start with and you should be fine.
