Good morning all! I was wondering if anybody has any info on converting an ale recipe to a lager? My buds and I made a brown ale that was outta this world and we would like to brew it as a lager. Concerns include higher attenuation (Nottingham ale vs white labs 840) and dryness.

Did you do it? How did it come out?

Uinta, a local brewery here, uses a hybrid Kolsch-like yeast for most, if not all, of their session ales.

I've seriously started considering going the same route for all my ales. After trying a number of different ale strains in my sweet stout, I get the cleanest flavor profile with a Kolsch yeast. It lets the malty flavors rise to the front. I would expect if I used it in a hoppy beer, it would let the hops stand out better too.

I use Wyeast 2124 for all my brews because it has such a wide fermenting temp range, 45-68 I believe.
