This might be a dumb question but is the voltage to the coil a minimum or maximum to activate it?
For example, could 120v be used to activate a 24v coil?
 
The coil voltage is the actual voltage the coil is made for. A higher voltage fed to a lower voltage coil will ruin it. There are also AC and DC coils.
 
As long as the signal that reaches the contactor matches what the contactor needs, then you are free to do that in whatever way you want.

120vac --> transformer --> 12vac --> contactor coil
or
120vac --> wall-wort --> 12vdc --> contactor coil
or
whatever
