Hello everyone,
I can only get my imperial citrus yeast down to 65f. Package says 68 to 80. It’s starting to show activity just curious on what the outcome will be

If you want the citrus that yeast is known for, keep warming it. I'd probably try for 72 to 75. The esters that give it the citrus aroma are created at warmer temperatures, the same way the undesirable esters are created with yeasts like Nottingham.
 
Thanks RM! Moving from the South to the INW my challenge is keeping it warm instead of cool. Just saw some sweet dual temp control devices so looks like a I need to build a chamber subudo
