Hey everyone, I’m wanting to make a stout with the standout taste smooth chocolate. My stouts have always come out with more coffee and roast than chocolate. My main specialty malt is usually chocolate with some added roasted barley and/or carafa III. What malts do you guys find works best for a lot of chocolate without a lot of roast? Should I just use chocolate and some crystal as the only specialty malts? Thanks in advance!
 
Try 8 - 12 oz. (for 5 gallons) unsweetened cocoa powder about 10 minutes before the end of the boil.
Very effective.
