Chiller question for you guys

Why do you all just put the evaporator in a cooler filled with coolant? You need something else to circulate the coolant.

Why not just remove the evaporator and install a tube in tube heat exchanger? It's not that hard. I have one sitting in my garage.

I would guess that the reservoir of cold liquid gives the system thermal mass so that you don't run out of cold fluid to pump through whatever you are chilling.
