Cheesecake flavored?

So, my boyfriend asked me to make cheesecake wine, if I could. I looked around a bit on my favorite forums and was surprised that no one had done this one yet. What with all the other weird things folks come up with. :D (But for some reason there is a commercial cheesecake wine. Go figure.) Further research revealed that dairy doesn't work too well with alcohol. Which is kind of a bummer.

So, here's my idea. I was thinking of using the recipe from this post and adding a cheesecake flaved syrup or oil. It seems like the easiest method. Lemme know what y'all think please. :)
 
I think your BF doesn't understand the way flavour works and that some things are vvv difficult to mix without some strange/unusual method and compromise.

Milk and dairy don't work well, it tends to split/curdle in the presence of alcohol - think on why cream liqueurs are relatively low alcohol and that there are few if any dairy type flavour vodkas (though lots of fruit flavoured ones).

Equally the subtle sour notes of cheesecake ? most might consider that a fault despite lambics and other specialist beers that use that flavour technique.......

If it works thats brilliant, but I think you've given yourself a hard task......
 
Perhaps you could approach this in the fashion of a braggot, but only using milled whole wheat. I might add some vanilla extract (or a split vanilla bean), a smidgen of cinnamon and small amount of molasses, dark brown sugar, or buckwheat honey, and some orange zest.

I might also use a light varietal honey. Meadowfoam, if you can get it, has a nice, almost marshmallow, taste.

My thinking is to try and pull some similar flavors from a graham cracker crust, and then the vanilla to simulate the cheesecake.

I dunno if I'd try this myself for the very reasons FB states above.
 
Might try adding some lactose powder. It will give it that creamy mouth feel found in cream sodas.
