Checking final runnings for ph and gravity on a grain father.

Brewing on a grain father and it doesn't really seem there is a way to check ph and gravity of the final runnings since the mashtun sits directly on the kettle.

I'm thinking once it's done draining the mash, I will have to relocate it onto something with a spigot. Any thoughts?

I’ve never really found a need for it, especially if I acidify the sparge water correctly. But if you’re really curious, you could put the grain basket onto a pie pan and collect the final runnings to make sure it’s okay.
 
I use my refractomemter and lift the basket higher to collect some drips to check gravity. When I’m done sparging I usually put the grain basket in a 5 gallon bucket and collect the last runnings. You can put a small cup or something in the bucket to check PH if you want but if you’re adjusting your sparge pH correctly it’s generally never a problem.
