I'm serving up a pin cask (5 gallons) of a porter tonight (in about 6 hours). I just tested the conditioning of it and it's too low, even for a cask. I have a beer engine and I will pulling it through there which will give an illusion of carbonation but I was wondering if there is any quick fix to get a bit more carbonation in there. There's a lot of yeast in the bottom of the cask, which I transferred over from primary so lots there to carbonate anything.
So, could I leave it at room temperature for a bit (there is some sugar in there that might not have been eaten up yet because I rushed it a bit)?
Could I add some sugar? The bottom of the cask won't be poured out either way.
