Carbonatiton taste?

So I'm trying to rush my carbonation so I have some beer ready for the forth of july and before I started my beer tasted like all my previous batches, now a week and a half later it seems to have lost all of its flavor and changed into something watery with acidity and what I can only describe as carbonated taste. Any thoughts on what this could be? I think I'm getting close to having the keg carbed since I get some head off a pour but no real bubbles in suspension. I hope I didn't ruin my batch by trying to rush my carbonation.
 
Carbonation does acidify the beer more (carbonic acid). From what I've read and experienced, it peaks right after you hit the carbonation level you wanted, and it's worse when you rush carb it. Certainly your previous tastes were warm and flat and both of those conditions offer greater body and sweetness. I'm afraid that beer isn't going to taste its best in 3 more days but it may be great in 3 weeks.
 
Dang, so letting it sit will oliveate (sp?) this? I don't mind postponing and just having some apfelwein on tap as long as this will clear up once it all balances.
 
yes, the carbonic acid 'bite' will be broken back down over time. this is the reason I never both with rapidly force carbing. 10 days at serving psi always worked well for me so I just aim to not run low on carb'd beer when I plan to need a bunch on hand (i.e. party!)
 
anyway to get rid of this taste quicker?? IMO worst taste for a beer, it wipes all flavor out and leaves an acidic water.:mad:
 
I have a very overcarbed Honeyale... and what i find that if you pour it in a glass, a couple minutes later that bite dissipates....and after a few more minutes its gone.

Hopefully my 2nd round of opening/recapping will lower that enough so others can drink it... most people dont like to wait 10 minutes with their beer sitting out on a hot day.
