Carbonating a Sanke Keg

Hi guys

I'm 100% new to kegging and am in the process of gathering all the bits I need to keg my homebrew for the first time.

I have a S type sanke keg and I need to establish something regarding carbonation.

I want to be able to hook the keg up to co2 to carb it without having to connect the beer line to a tap, yet... is that possible with a sanke keg? Will I just need a shutoff valve on the beer line?

Would something like this work?

This is the coupler I bought, has a 3/8" fitting

Will the plug below be an option? Will it hold the pressure? Can this plug directly into the coupler?

A shutoff should work as long as it will hold pressure. I use a coupler that I used a dime and a pair of gaskets in place of the tailpiece for the beer out line.
