New to wild yeasts here so please forgive. I made a session blonde yesterday afternoon and pulled a OG sample off the boiled wort into the hydrometer test jar. I got busy and left it there overnight. When I went into the garage just now, it was violently bubbling, I assume fermenting, and had driven the hot break to the top. It doesn't smell bad, almost like a sour really and it is all cloudy. If I didn't know any better, I would say it was fermenting like a beer should.
I live in Savannah, GA and it was pretty hot today. Just a few questions:
- Any chance that I caught a good bug that I should consider saving and trying to brew with?
- Can I make myself sick by using just any old wild yeast I catch?
I think it would be neat as hell to brew a local batch of beer using a wild local strain but I don't want to make anyone sick! All advice is appreciated!
