can you add Potassium Sorbate to stop fermenting?

In wine making I add Potassium Sorbate to my batch before bottling to make sure that the yeast is turned inactive and I don't get any bottle bombs happening, can that also be done in beer making?
 
Sure you can and if you bottle you will get no carbonation because it takes yeast action to provide the CO2. Better bet is to create conditions so the beer ferments out completely (as completely as it can), then add the correct amount of sugar so you get the carbonation you want.
