I have a kegerator system with two taps. I just reloaded my one side last week with a Blueberry Wheat. My Blonde Ale just kicked last night freeing up slot #2. Now my dilemma is I have a Strawberry Wheat that has been conditioning for a couple weeks and is ready to go into slot #2, but I have an Oktoberfest in the secondary now that is going to be ready in 2 weeks that I want in my kegerator when it is ready. So should i tap into the Strawberry Wheat and just switch over to the Oktoberfest when its ready or is it bad to take a keg off the CO2 when it is half empty. I have a spare fridge where I could still keep the Strawberry Wheat cold. I was just looking for advice/suggestions on what I should do. Leave an empty spot until the Oktoberfest is ready or fill with the Strawberry Wheat until Oktoberfest is ready?
