Can I pitch some corn sugar after primary fermentation is complete?

So we have made this Caramel Apple Cider the past few years:

This year, we are making a 3 gallon batch instead of a 5. So when we got the apple cider back from the orchard, I pitched the yeast (Wyeast 4766 Cider Yeast) and forgot to add the corn sugar before primary fermentation. So my question is even though it has been finished fermenting for a few weeks (I've been waiting for one of my kegs to empty), can I throw the corn sugar in now and let it further ferment to get the gravity the recipe was built on or should I just make a lower ABV cider. I think the OG of the fresh pressed cider was 1.054. Haven't taken a final gravity since I didn't want to expose the cider to oxygen before I back sweetened it.
