Can I make a cyser in time for christmas?

Local orchards are selling fresh cider. I have 5 lbs of honey that I need to use up. Can I make a batch of cyser that will be drinkable in time for christmas? I am looking to either make a 3 gallon batch, or a 5 gallon batch.
 
I don't see why you couldn't make a 3 gallon batch with the juice and 4lb of the honey, and maybe some cinnamon and nutmeg, then if it did taste a bit "young", back sweeten it with the last pound........
 
+ 1 to what the big bloke said. A little extra sweetness will cover up a lot of sins. (Will be much better next xmas IMHO but you do what you gotta do)
