24 hours will work. Could throw it in as early as 12. Wine yeast is pretty strong, it'll start even in the presence of sulfites.
 
I didn't add them to a batch of ginger wine I'm currently making.
But I have been advised to add them during the first racking off process... Good idea?!

The campden will offer some protection against oxidation. However, I made a decent ginger mead without ever adding any. You should be fine either way.

Ahh thank you! I'll keep my eye on it, I'll also try to knock out as much air as I can during the racking off process.
