I made a fortied apple wine - around 15% ABV and a FG of 1,030.
I had it in a small oak barrel for 3 months and just finished bottling it all. Looked awesome - crystal clear.
BUT - I didn’t add any campden !??
Is this really a must? Should I empty all bottles and start again with added campden this time? Or will it keep on for a year or two?
Hope I didn’t mess up! I usually make cider and don’t add anything at bottling — but that is also gone within a year
