I'm making round 2! Its already in primary as we speak. I didn't add the tablespoon of cinnamon at the end of the boil. But I did add the molasses at the end of the boil instead of at the end of high krausen. This time my recipe was a little different but not too different.
3.3lbs light LME
2lbs Pilsen DME
1lb Crystal 120l steeped for 20 minutes at 150F
.5lb Crystal 20 steeped for 20 minutes at 150F
1 ounce Northern Brewer 60 mins
1 ounce Saaz 5 minutes
1 cup of Molasses 5 minutes
16oz Turbinado sugar at end of boil
Windsor yeast
After 14 days in primary I will be racking up to secondary on top of 8oz of caramel, 8oz of butterscotch, and 7.5oz of cinnamon sticks. After a week in secondary I'm going to add 4oz of McCormick's Vanilla Butter and Nut Extract, and 4oz McCormick's Pure Vanilla Extract. Then let it sit for a few more days and then bottle with 8oz of priming sugar.
