So I tried to make 5 gal of burnt cider, but I got nervous taking the honey any darker than this. Cooked it for a hour and ten minutes Been going for a week now, so far so good gravity was 1.07

Any one with experience have any suggestions?

Nothing wrong with not taking it all the way to black. Each stage has a different taste, this will go well with your cider. Drop in a vanilla bean to highlight the caramelized flavors from the honey and if you have some to backsweeten it with so much the better. WVMJ
 
Can you please share your recipe / method... Sounds interesting...
