I want to bottle with my beer gun and my question is how much pressure do I use when filling the bottle? Does the pressure change with temperature of the co2 tank. Mine is left out at about 55-60 degrees so would I need a higher pressure than I use when serving from a refrigerated tank?

you can use whatever pressure you want, just keep it low enough so things dont foam too much. about 5-8psi seems to work well

It doesn't really matter what temp the CO2 tank is, though hopefully your beer is colder than 55-60ºF. I usually start low, around 3psi, and then ramp up to 5-8 until I start getting significant foam.
