So I put down a Rochefort 8 clone attempt this Saturday, and all is well so far. I cultured from a bottle for my yeast pitch, and planned to grab another to use for fresh bottling yeast. Unfortunately there isn't another bottle of Rochefort in town at this point, the liquor stores rarely get them in, and they move very quickly from the shelf. I am worried about just using s-05 or trusting the yeast still in suspension due to the 9%+ anticipated alcohol content. Any harm in using say the Chimay strain to carb this in a couple of months? It's good and alcohol tolerant, and that stuff is always available.
