I am devising a recipe for a strawberry witbier that I would like to be similar to Fruli. I am going to rack onto strawberries and was wondering how could I impart that red color fruli has into my beer. I am considering using strawbbery juice/water mix to top up but I am nervous that the fermentation when it comes to bottling will be to vigorous due to all the sugars in the strawberry juice. How can bottle bombs be prevented, I do not have the means to force carb so that's out. Am I just being paranoid?
 
Rack the beer onto frozen strawberries in the secondary and you will get plenty of color in the beer. I'm not familiar with the color of fruli, but there should be a noticeable amount of red.
