Blueberry kölsch with K-meta?

I make a pretty good kölsch. Going to do a coffee kölsch next, with 2 oz underground Ethiopian blonde roasted coffee beans added to the secondary.

My beautiful, yet #basic wife loves whatever that BMC blueberry lager is. I was thinking of making her a blueberry kölsch. Easier, better esters, and what's the point of the subtleties of a lager if you're going to overpower it with fruit juice anyway?

Question: I plan on adding 2 oz blueberry concentrate to the secondary during cold crashing (along with pectinase and bio-clear). Do I need to hit it with potassium metabisulfute and sorbate? Or will racking and cold crashing suffice?

I never see K-meta or sorbate used in beer. Is it detrimental to beer?
