Hi:

A friend in Canada sent me a bottle of birch syrup (think: Maple syrup, only from birch trees.)

I've done some playing around with maple syrup in beers before (made a porter that had maple syrup added at flame-out, and a maple wheat that wasn't quite what I hoped for) but never birch syrup.

It's quite a bit more bitter than the maple syrup I'm used to, and tastes lousy on pancakes.

Neither of my kids like it, nor does my wife. Thus, it's either "use it in a batch of beer or throw it out", and I'm averse to throwing out a $25 bottle of syrup.

Anyone ever use birch syrup in a batch of beer? If so, I'm all ears.
