Looking for some feedback on an IPA recipe that uses Centennial, Amarillo, and Simcoe. Calling it Biker Gang IPA because I'm brewing it with some friends and we all ride bikes (as in triathlon, road racing bicycles)

The malt will be All-Grain: 90% 2-row, 6% Crystal 20, 2% Carapils, and 2% Munich. Should give an OG of 1.066 with our efficiency. Wanted to shoot for something that was light and didn't have much malt presence so it would let the hops dominate.

The hop schedule is really where I'm looking for some feedback. We've got Centennial, Amarillo, and Simcoe to use. These are all great hops so I want to make sure to maximize their potential. We can get more Centennial if needed, but kind of locked into 3oz Amarillo and 5oz Simcoe. Keep in mind this is for 8 gallons:

60 minutes: 2.0oz Centennial
20 minutes: 0.8oz Centennial, 0.8oz Simcoe, 0.5oz Amarillo
10 minutes: 0.8oz Centennial, 0.8oz Simcoe, 0.5oz Amarillo
5 minutes: 0.8oz Centennial, 0.8oz Simcoe, 0.5oz Amarillo
Dry hop: 0.8oz Centennial, 2.5oz Simcoe, 1.5oz Amarillo
