I have d/l the demo version of Beersmith and I am trying it out for the first time and I am confused about how the timers work.

I am doing a BIAB and I have setup the recipe which calls for a 90 minute mash. When I look at the brew steps, after the 90 minutes, it is listing and increase in the temperature of the wort to 168 degrees over 7 minutes and hold that for 10 minutes.

Seems straight forward enough but here is my confusion; when I start the timer, is lists 1:40:00 for the mash, 7 minute rise in temp and then hold for 10 minutes for a total of 1:57.

Where does the extra 10 minutes come from?

Prolly 10 minutes of rise time listed for the 90 minute mash.
I always set the rise time to 0, as the water is at temp when I dough in (BIAB).
