Hey! I’m working on my first mead. It's been 2 weeks since I pitched D47 into a gallon jug with 3 lbs orange blossom honey. I used the recommended amount of energizer and nutrient – which I didn't stagger. Fermentation was never speedy – a bubble every 4 seconds -- and now it’s still. I think I had a loose bung.
I had an OG of 1.09. Now it's at 1.00. I want to rack into a bucket with a couple pounds thawed and crushed frozen peaches. My questions: Can I rack now? Do I need to add pectic enzyme or anything else to this secondary? And is there any way to assure there will be a little bit of carbonation when I finally open a bottle?
I would love any advice or corrections anyone may have! Thank you!
