I am in the experimental stretch of brewing beer. Thinking of doing a Bananas Foster inspired brew. Putting wheat in the mash to cream it up and add brown sugar late in boil. Vanilla beans and dark rum in secondary. Use a wheat yeast to add to the banana flavor.

Thinking of brulee the bananas with brown sugar, then trying to decide if to add to the mash or secondary.

Any input or opinions are welcome.
 
Id look into 3787 as a yeast (fermented around 68-70), with some dark d-180 candi syrup, I think that would have all the basic flavors and make a good base for something like this.
