Apfelwein question

I poured 2 gal apple juice and 1 lb local honey on a yeast cake left over from a Wit Bier, in a carboy. It went ballistic :D For a day or two.

Two weeks later, it smells great, but still looks cloudy. Should I just leave it in the carboy? How long? Try to siphon it off without getting the tons of yeast?

The carboy temp is low 70's, can I just leave it there for a while?
 
Well in the Apfelwein directions it says to leave the juice sit in the carboy for at least 4 weeks. Not that I'm an expert or anything, but this is different from beer which from I've read usually finishes out in 2-3 weeks.
