My LHBS doesn't carry these. I can't figure out what Briess Brewer's Malt is, let alone figure out a substitution. Same for Briess Pale Malt.
 
Their brewer's malt is what other domestic maltsters call 2-row - Great Western, Rahr, etc - usually in the 1.8-1.9L range. The pale ale malt is a little darker kilned, 3-4L, so other domestic pale ale malts would be the sub.
