I'm going to start brewing all grain instead of extract brewing here pretty soon. I was looking at the all grain systems you can purchase online and saw that they all come with two coolers, I've watched a lot of videos on all grain brewing And have yet to see someone use both coolers. My question is what the hell us that second cooler for?
 
The reason someone would want to use a hot liquor tank cooler is to be able to fly sparge with only one burner/pot. During a 60 minute sparge, the water would cool off too fast if it were in a bucket. If you batch sparge, it's more common to collect wort into buckets and just dump the sparge water into the mash tun right out of the kettle.
